Firstly, let’s address the elephant in the room: the name. TBC stands for The Butter Club and comprises two of Amsterdam’s up-and-coming young chefs, Gabriël Verheij and Alexandre Scour. Both have spent time in top kitchens across the world including Michelin-starred RIJKS at the Rijksmuseum, the esteemed Tonka and Vue de Monde in Melbourne and at Bar du Champagne. The pair met at Vanderveen in Amsterdam’s Oud-Zuid neighbourhood, and have hosted a huge range of pop-ups, residencies and collaborations across the Dutch capital ever since. TBC sees Gabriel and Alexandre bring their signature luxury comfort food to London for the first time, where they serve a concise menu of globally-inspired dishes.
The menu is designed to be shared and diners can expect to find a selection of inventive creations. Smaller dishes might include fried chicken with nori mayo and caviar, BBQ langoustine with Sichuan butter sauce, and yakitori leek or maitake mushroom with po - Korean dried meat or fish. While a revolving list of just three mains includes things like Hokkaido milk bread lobster roll, fried oyster mushroom bao bun with soy glaze kimchi and pickled daikon, and their signature fried buttermilk chicken brioche feuilletée.
Dishes can be accompanied by sides including potato terrine with pesto aioli, mac and cheese with chives mayo and pickled onion, and ‘Dutch’ slaw. Not one to shy away from a trend, diners can also try the pair’s original square croissant creations - with fillings including cinnamon and pecan praline, corn and pickled blueberries, and dark chocolate and cacao nibs.
Alongside the food menu, guests can choose from a range of craft beers and buttery twists on classic cocktails, while the decor reflects the chef team’s love affair with all things audio, with records displayed on walls by the likes of A Tribe Called Quest and Method Man.
