REBEL Restaurant began at first as a dynamic fine dining concept, without a bricks and mortar space. Born in lockdown, the founders hosted fellow foodies out of their homes, before moving onto pop-up events and even at-home kits. Since 2022, though, REBEL has had a place to call its own.
The restaurant has an intimate feel with two small dining spaces decorated with trendy details like sage green wall panelling, exposed-bulb lighting and atmospheric artworks. A great place for a date or catching up with close friends, you can grab a more casual bar stool or snuggle up at one of the small tables.
REBEL's dining concept is all about celebrating the best produce the North East has to offer and says everything on the menu has been considered for locality, seasonality and sustainability. Its an ethos which has served them well, with REBEL having earned its place in the Michelin Guide after having been open for only six months.
The restaurant is open Wednesday to Friday for dinner, or Saturday for lunch aswell. All menus are set-course tasting options, with the choice of either five or 10 course depending on your preference. Due to the emphasis on fresh produce, dishes are bound to change regularly but the website does offer a sample of what to expect. You'll find some of the same dishes across the two menus, but of course, the 10 courses offers more variation with an exciting mix of flavours.
If you're looking to whet your whistle, we love the sound of the smoked brie with fermented kohlrabi and roast onion, followed by halibut with fermented artichoke, preserved lemon and pine butter. For dessert, the whey sorbet and Dulce De Leche is a unique pairing, as is the malt cream with preserved fig and fig oil. Plus, each course comes with a delectable wine pairing, chosen by in-house sommelier, Rosie.
