For his new menu at Velvet, Calabrese looks to historic icons for inspiration, from Marie Curie to Walt Disney, and has named this collection of tipples 'The Quote Book'. By harnessing the powers of AI, many of the world's most revered names have been reimagined in a contemporary light, with the likes of Albert Einstein sporting sunglasses and a puffa jacket.
As for the cocktails, each one is given a creative name inspired by a person of note, and accompanied by a quote - perhaps a handy talking point, especially when on a first date. Speaking of Einstein, for example, the V=SC squared is said to be floral, dry and aromatic veggie, with Ginepraio Dry, trio peppers, Muyu Jasmine, Moscato D’Asti and aromatic oils.
As for food, there's a selection of bar snacks which are easily devoured in a bite, from spiced Devon crab bao bun sliders and avocado tartare, to Lake District Farm beef skewers with truffle mayonaisse. Delicious.
