A lot has happened to this iconic clifftop mansion since Lord Byron spent his honeymoon here back in the day. Chefs have come and gone, and the interior has seen several incarnations, but the hotel has now entered a new era. For something flexible head to Ozone within the Serenity Spa – a brasserie-style eatery with floor-to-ceiling windows, a spherical outdoor terrace and a centrepiece cocktail bar. The open kitchen sends out a user-friendly assortment of eclectic pan-Asian dishes: share some confit duck pancake rolls, mixed dim sum or a salad of swamp cabbage with toasted garlic, soy sauce and croûtons before tackling a big bowl of Thai prawn curry, crispy pork belly with Chinese kale and spring vegetables or ’waterfall beef’ served pink with chopped mint and spring onion. If something sweet is required, try coconut pannacotta or lime cheesecake.
