Holland and Holland is a shooting ground and lodge located in 60 acres of countryside just outside of London. Here, guests can enjoy world-class, royal-approved shooting tuition, take part in country pursuits such as geese herding and archery, and try out a spectrum of dining experiences.
Chef Joshua Hunter is at the helm of the site's main restaurant and brings with him experience from Michelin-starred kitchens including La Trompette, Murano and Kitchen W8. His style pays homage to traditional British fare but with a modern edge and honours the best of the UK's produce, sourcing venison from Berkshire, day boat fish from Cornwall, middle white pork from the Wye Valley and Heirloom tomatoes from the Isle of Wight.
The a la carte menu offers starters, mains and sides, as well as desserts and cheeses with plenty of variation throughout. Appetisers include crispy soft boiled egg with Jersey Royal and wild garlic veloute, alongside tempura courgette flower with house ricotta, pickled beetroot and basil.
For mains, expect the likes of barbecued baby violet artichokes with crispy comte polenta, grilled grelot onion and sauce vierge, as well as roasted rump of Cornish hogget with pressed cured lamb belly, burnt aubergine puree, piperade, black olive and lamb sauce.
If you have a sweet tooth, make sure you leave room for desserts like burnt lemon tart with fresh raspberries and creme fraiche, Valrhona chocolate brownie sandwich with salted caramel ganache and milk ice cream, as well as macerated strawberries and lime with warm tonka beignets and baked strawberry ice cream.
These dishes are complemented by a glorious wine list, with the restaurant boasting a collection of over a thousand bottles which are stored in the lodge's private dining space, The Wine Room. There are also Dalmore whiskies, expertly-mixed cocktails and a large selection of spirits to choose from.
