Joshua is known for his work at several Michelin-starred establishments including La Trompette, Murano and Kitchen W8, all in London. Joshua takes his inspiration from traditional British dishes and puts his own updated spin on them using the best seasonal ingredients. Dishes that you might expect to see on the menu include glazed Cornish mackerel with apple and celeriac remoulade, pickled apple and fermented chilli dressing to start, roasted rump of Cornish hogget with lamb fat black garlic potato terrine, BBQ hispi cabbage and lamb sauce for main, and mango parfait with coconut rice pudding espuma, crispy moong dal and lime for dessert.
