The owners behind Vero Moderno are aware that over the last few decades especially, the North West and Greater Manchester have become a bit inundated with Italian restaurants serving supposed favourites – like spaghetti bolognese, carbonara and lasagne, but not necessarily in the most accurate way. At this Chapel Street restaurant in Salford, the team seek to deliver dishes that are fresh and delicious, never compromising on authenticity, taste or quality.
The a la carte menu begins with the starters like the half buffalo mozzarella with a 24 months aged Parma ham, garlic and basil cherry tomatoes, which comes served with homemade focaccia bread. Meaty jumbo king prawns are also on this part of the menu, tossed in a white wine sauce with chilli and garlic. The fried aubergine starter is popular, coated with tomato sauce and filled with a melting, smoked mozzarella. For your main, enjoy a pasta dish of spaghetti in a lightly spiced broccoli and saffron veloute that is topped with paprika and parsley infused breadcrumbs. For something really rich, try the homemade potato gnocchi in a butternut squash and Gorgonzola cheese sauce, topped with crumbled hazelnuts and Speck powder.
Other main courses include the premium, fresh swordfish steak that is coated in a Mediterranean breadcrumb served with fried courgettes and a mixed vegetable and spelt salad. The prime cut, oven baked chicken roulade is stuffed with a smoked cheese and lentil sauce before being wrapped in smoked pancetta, served with roast potatoes in chilli and garlic broccoli. There are also plenty of pizzas options, with both red and white sauce bases.
On Sundays, enjoy the Italian slow roasts from 12pm, there is a choice of chicken, pork and lamb, slow cooked to perfection and served with rosemary roast potatoes, seasonal vegetables, gravied cooking juices and freshly baked bread.
