Tom thanks his fond memories of exploring farmers' markets in Pembrokeshire, foraging in the picturesque West Wales countryside, and harvesting vegetables from his mother's garden for forging a profound connection to Welsh ingredients, serving as the cornerstone of Tom's culinary philosophy and the inspiration behind Thomas in Pontcanna. After three years of showcasing the finest Welsh produce in the heart of London, Tom and his partner Lois were thrilled to return to their roots and unveil their inaugural restaurant in Wales.
