The Water’s Edge is a two AA rosette-winning restaurant located within Falmouth’s Greenbank Hotel. The kitchen, overseen by executive chef Nick Hodges, aims to serve imaginative dishes which show off wonderful local ingredients. The restaurant may only be open to hotel guests for breakfast, but everyone is welcome for lunch and dinner where an all-day a la carte is offered. Whether you’re searching for somewhere family friendly for a memorable Sunday lunch, or fancy an indulgent three-course dinner, The Water’s Edge has something for all occasions.
The Hotel’s harbour setting provides the inspiration for the restaurant’s interiors; the typically light space has pale wood floors & sweeping picture windows that offer show-stopping, 180-degree views over the estuary & Falmouth harbour. Décor is minimal other than the odd picture hanging from the wall which only adds to the relatively relaxed ambience. For those rare sunny days, there is also a sun-drenched terrace and bar, which is well worth heading to for a pre-dinner dinner drink while you peruse the extensive menu.
As you might expect, the kitchen put freshly landed seafood at the heart of its brasserie-style output – hake fillet teamed with scallops, Puy lentils, samphire & sorrel crème fraîche or wild black bream accompanied by white asparagus, red peppers, white bean purée & pea shoots, all delivered in an assured, uncomplicated manner. Away from the sea, you might find char-grilled Cornish sirloin steak served with pepper sauce or garlic butter, and slow cooked game pie with creamy mash, as well as desserts such as elderflower & lemon posset with sea buckthorn sorbet & vanilla-tinged apricots.
Drinks at The Water’s Edge are equally as impressive. An inventive selection of expertly made cocktails are the perfect accompaniment to nibbles, while a wide range of spirits, beers and wines (available by the glass and bottle) are also available.
