Then replace any lost calories with dainty plates of wild salmon with dill potatoes & saffron velouté or char-grilled tuna & watermelon. Those on liquid diets might appreciate miso soup with wakame or – more likely – a signature cocktail of pear juice, elderflower & Laurent-Perrier. Prices are exceedingly Dorchester, but not excessive: a tower of very serviceable scones & cakes (praline cream-filled choux buns or pastry baskets overloaded with berries), plus smoked salmon & cucumber finger sarnies, weighs in at £38. It’s a matter of choosing between wallet & waistline.
