Following its restaurants at HMP Cardiff and High Down in Surrey, the Clink charity has launched a third outlet in the old governor’s house at HMP Brixton. Like its predecessors, this “ground-breaking initiative” serves as a training establishment for inmates and an ‘opportunity for rehabilitation’, with support from local businesses and members of the public. The restaurant is spread over three floors, with a meetings venue attached and a daily menu that’s designed to challenge and inspire – all backed by “incredible service”. Starters of twice-baked goats’ cheese soufflé or seafood terrine with scallops, horseradish emulsion and beetroot crisps might precede chicken bourguignon or sesame-coated duck breast with pak choy in an Asian-style broth, while puds could include chocolate and hazelnut mille-feuille.
