Many of the dishes celebrate a love for the ocean, all seek to champion local seasonal produce, and some are directly inspired by artists featured in the collection. The Tate St Ives Restaurant menu is formed of small plates, large plates, and sides. Small plates include seaweed and cider salami with cornichons, Cornish Yarg with a beetroot and mead relish, and a seafood cocktail inspired by the Mark Rothko exhibition ‘The Seagram Murals’.
The large plate selection is just as inventive. Think Brazilian langoustine fish stew inspired by the Beatriz Milhazes exhibition, Cornish hake with golden heritage beetroot, and Tregassow farm asparagus with courgette, buckwheat and sea lettuce pesto. Equal attention is paid to the sides. Expect a lizard herb leaf salad with maple roasted seeds, and skinny fries with dulse seaweed pepper. And to round it all off, guests can indulge in a board of Cornish cheese, or Treleavens ice cream and sorbet.
