A holiday resort in North Wales isn’t the kind of place you associate with serious dining, but Signatures is a real find. Here is a “family-owned restaurant of elegance and style” offering “sublime food” and service that’s “second to none”. The fact that the owners have “done it all themselves without any corporate input” makes the whole package even more impressive, notes one fan. Staff treat everyone “like a VIP”, combining professional chic with warmth and friendliness, while the kitchen applies a sure hand to well-sourced supplies of seasonal produce. A signature starter of crispy pork belly with homemade black pudding, smoked bacon beignet, caramelised apple purée and crunchy crackling sets the tone, or you could begin with an open lasagne of local lobster and smoked chicken with black truffles and rich thermidor sauce. Mains also put ingredients to the fore, from wild sea bass with seared king scallop, prawn tagliatelle, glazed courgettes and coral cream to extra-mature Welsh steaks with all the trimmings. To finish, order Welsh cheeses or ‘Little Italy’ – a luscious assortment of mini desserts with a Mediterranean theme.
