Here at SquareMeal, we’re all about seeking the truth to life’s big questions – like how do you improve upon the already perfect institution of brunch? Well, much-loved chef Francesco Mazzei has the answer. This Saturday, his restaurant Sartoria will launch its new pasta brunch.
The popular Mayfair haunt will offer a brunch menu which champions pasta, offering playful brunch-inspired twists on classic Italian plates of pasta. Dishes you can expect to see on the menu include a novel twist on the brunch staple of eggs royale. In this version, the traditional muffin is replaced with a crispy pasta rosti, before being topped with the usual smoked salmon, poached eggs and Hollandaise sauce.
The carbonara is best for traditionalists
Of course, no brunch these days is complete without a helping of the ubiquitous avocado, so you can expect to see that pop up on the menu too. Sartoria will serve up a creamy and zesty bowl of tagliolini gratin topped with poached eggs, avocado, shrimp and Amalfi lemon.
Brunch ends with a sweet pasta dish
There will be dishes to satisfy the pasta traditionalists too though, such as a classic spaghetti carbonara, or freshly-made ravioli filled with a runny egg yolk centre. To finish, brunchers can satisfy their sweet tooth with a dish of deep-fried tortello filled with marsala zabaione and chocolate sauce.
The pasta brunch at Sartoria launches on 11 May and will take place every Saturday from 11am.
