In London, you often see certain interior trends take hold, suddenly popping up at restaurants all over the capital. Just take millennial pink for example, or living walls – now though, The Bournes & Hollingsworth Garden Room at The Assembly Hotel has decided to take things one step further, with the launch of London’s first living bar.
The Garden Room team has been busy growing a range of herbs, garnishes and botanicals to create London’s first living, breathing bar – an interactive experience, where guests can hand-pick the natural ingredients to infuse in their cocktails, as well as the garnishes to decorate them with.
The bar is surrounded by botanicals
Launching on Thursday 28 March, the living bar is covered in botanicals and herbs, which cascade down from the ceiling and line the counters, as well as growing up trellis’ at the front of the bar. In order to make you really feel a part of the experience, guests are encouraged to reach up and pluck their ingredients from the hanging plants or surrounding herbs to create a truly fresh serve.
Cocktails will be made using garnishes directly above the bar
The Garden Rooms’ expert bartenders will then make you a cocktail using the ingredients you’ve picked, utilising a base of the brand new Ketel One Botanicals. To further the interactive element, shelves of fruit and herb crates will be placed on tables to extend the bar’s reach, which the boxes forming part of an interactive menu, where guests can forage for their own garnishes without having to leave their seats.
