Start off with some tempura oysters in an apricot ketchup, along with beef tartare with beef fat cream, soy yolk and sesame, and stuffed courgette flowers with pickled courgette gribiche. Bigger dishes include poached sea trout with nori, smoked cream, sea herb dumplings and samphire, along with halibut steak with a wild mushroom and spinach fricassee and smoked garlic butter, and roasted fillet of beef with marrowbone and parsnip. Pudding finishes off with a pistachio and chocolate tart with clotted cream, along with an orange posset with poppyseed sable, and a classic Welsh bara brith with stilton and blackberry jam.
