In 1986, Nanette and Maurice embarked on a mission to introduce artisan baking to Cheltenham,
driven by their passion for simple, real food made with the finest ingredients. Maurice, a renowned
master baker, scoured the globe for the best producers of fine ingredients, sharing his discoveries
with Nanette. Today, as Maurice continues his global bakery consultations, Nanette remains dedicated
to their dream, bringing it to life in Montpellier and Tivoli, Cheltenham. Then 14 years later, the desire
for new adventures and sunshine led them to a small island community in Florida. Eventually
returning home to open Maison Chaplais, the Deli in Tivoli, the couple's love for their craft remains
unwavering. Now, with 'Chaplais Deli' in Tivoli and the addition of 'Chaplais Kitchen,' a new bistro cafe
in Montpellier, the dream has grown.

sausages and maple syrup. The lunch and evening menus boast culinary delights such as chicken
liver pate with Red Martini reduction, French onion soup, and mains like slow-simmered beef flank hot
pot with fries and broccoli. Enjoy the Normandy pork, featuring pork fillets in a creamy white wine and
cider sauce with sautéed apples and Thai rice. The menu also offers a variety of salads, pasta dishes,
and pizzas, ensuring a diverse and satisfying dining experience. For dessert, try a warm bakewell tart,
