The Chapter menu combined modern approaches and a provenance-focused procedure to recreate classic dishes to suit any occasion. Whether it be a three-course menu, canapes and drinks, bowl food, or a full English breakfasts, all meat is sourced from free-range farms, all fruits and vegetables are obtained from LEAF-accredited suppliers, and where possible all fish is sourced from daily catches in British waters.
The breakfast offering features a variety of options, like a stand-out full English with maple-cured gammon rib-eye, Butler sausages, and Clonakilty black pudding served with wild mushrooms, eggs, rosti potatoes, and confit vine tomatoes. Lunch and dinner menus offer a varied selection of dishes that vary with the seasons. Starter options may include tender seared Brixham scallops served with Jerusalem artichokes and crispy bacon, cured and torched mackerel with poached rhubarb and compressed cucumber, or boneless chicken wings with caramelized cauliflower puree and crispy chicken skins.
