In particular, it’s known for its Tajim Heifer beef, which is rarely seen or experienced outside of Japan. The kitchen is directed by head chef Fumiya Kase, who ensures the highest quality ingredients and exceptional attention to detail across every dish.
The menu begins with a selection of starters and bread ‘from the kiln’. These might include sliced duck breast with salsify, foie gras and truffle, or caviar with quail’s egg and pickled shallots, which are sure to whet your appetite. Main course is focused around its Tajim Heifer steaks, which are also cooked in the kiln and seasoned only with salt and pepper for the best possible flavour.
