This summer, Aperol Spritz, the Italian bittersweet aperitivo, has teamed up with the restaurant to launch a summer drinks menu focusing on the iconic sup. Even better, groups of up to 100 who book the restaurant’s first-floor dining room get automatic access to it.
There's more to the mighty Spritz than you'd think, as The Lighterman mixologists have twisted the drink five times. Five new spritz recipes are on offer, including the Hugo, with Belvoir, elderflower, mint, lime and prosecco, and Wine Not?, with Belsazar red, Aperol, crème de mure, lemon, rhubarb bitters and Mediterranean tonic.
Food-wise, executive chef Tom Kelleher has devised a lighter, fresher menu appropriate for the summer months. Think yellowfin tuna tartare, avocado, chilli and toasted sourdough; pan-roasted chalk stream trout, broad beans, peas, Jersey royals and lemon butter sauce; and grilled aubergine and red peppers, mixed grains, Romanesco and pumpkin seeds salad.
