In 2014, Richard Corrigan bought Virginia Park Lodge, where he and his wife Maria had been married. Since then, they have been restoring the lodge to its former glory. Corrigan is well-known as one of the best chefs in the UK, having earned two Michelin stars, won Great British Menu four times and cooked for the Queen. While the lodge is an excellent place to visit all year round, it is exceptionally beautiful at Christmas. As such, the team offer Christmas lunches and special festive bookings.
Food at any establishment headed up by Corrigan is guaranteed to be perfect. While the menus change to follow the seasons, sample menus give you an indication of what to expect. You might see delightful canapes to start things off, such as cheese fondue with crusty bread, crisp olives with goat’s cheese or a terrine of cured meats with sour apple and sorrel. Your main might be something hearty like a roast sirloin of Hereford beef with chargrilled onions, salsa verde, rosemary roast potatoes and greens from the Gooseberry Garden on site. Desserts at Virginia Park Lodge might take the form of a vanilla, date and custard tart with sherry-poached pears.
For your festive stay at Virginia Park Lodge, there are 23 rooms to choose from, along with 15 cottages (seven of which are self-catered). Each cottage sleeps two to six guests and is fitted with full kitchens, bathrooms and modern furnishings. In the Deerpark Forest, there are 12 cosy shepherd’s huts, each sleeping two guests.
