You might know Coworth Park as, famously, the only UK hotel to have its own stables and polo field, or as host to Prince Harry’s pre-wedding night. In recent years it has also developed a serious foodie reputation thanks to chef Adam Smith - a Roux Scholar and protege of legendary chef John Williams at The Ritz.

Smith has held a Michelin star at the hotel for years, but Woven is a big relaunch for the restaurant (previously Restaurant Coworth Park) and now, Smith has his name on the door. The restaurant has been beautifully redesigned, in a surprisingly modern way given that Coworth Park is part of the traditionally opulent Dorchester Collection. Woven is much more restrained - gaze through into the main dining room and you’ll see sleek black floor lamps swinging a high orbit over round tables and low-slung armchairs, and a series of loom-like weaves stretching across the ceiling at jaunty angles. Then there’s the light-filled conservatory, complete with views across the beautiful Berkshire hills - a gorgeous, sunny spot for summer months.

A waft of good cheese greets us from the pantry as we enter - one of many areas where Smith shows great appreciation for British produce. The menu is cleverly assembled so you choose a starter, main and dessert from three options, and the rest of the meal is delivered in impossibly beautiful snacks. Smith’s Ritz background comes to the fore in lux treats like a one-bite caviar tart, but there’s also ingenuity in morsels like a spoon of avocado, basil and yuzu with little puffs of quinoa for some crunch.

If there’s a dish that sums up Woven best it’s Smith’s signature combo of turbot, lobster, truffle and baby leeks, swaddled in a foamy Champagne sauce and topped with caviar for good measure. For those who enjoy life’s finer things, this one takes some beating, and it was all the better washed down by buttery Danbury Ridge Chardonnay. All that without mentioning what might be the best bread course in the country - Old Winchester croissants, superb sourdough, glazed Parker House rolls and more, served with lobster oil, pumpkin seed butter and more besides.

Service is well measured too, friendly and attentive at all times, contributing to what is an exceptional from start to finish. Woven could be mistaken for being a simple refurb and menu overhaul, but it is so much more - a sparkling new restaurant for a chef who is firmly in the UK’s very highest echelons.

Dorchester Collection's luxury country house hotel and spa at Coworth Park, Berkshire is home to acclaimed chef Adam Smith and his latest restaurant - Woven by Adam Smith. Set in the picturesque grounds of Coworth Park, the restaurant is surrounded by 240 acres of parkland, trees, flowers and wildlife. Taking inspiration from the quintessential Berkshire countryside, the restaurant takes on a natural concept that offers an unforgettable culinary experience.

Coworth Park interior designer Martin Hulbert has also taken the lead on designing the restaurant, and it follows a similar sense of grandeur. Each detail of the design is inspired by the natural world and its beauty; fabrics, lighting, artworks, natural materials and striking colours and textures will all contribute to an intriguing, unique but luxurious dining space. The main dining room has the capacity for 44 guests while the adjoining conservatory adds an extra 12 guests; it is within this space that diners will get the best views of the park. 

Dining at this Georgian country house is a special occasion brought about by Adam Smith's innovative and contemporary menus. The menu takes diners on a culinary journey with sections labelled from the pantry, larder, stove, pastry and finally a treats section. Kicking things off in the pantry, there are simple snacks like devilled egg, caviar and Coronation chicken. Moving to the larder, you'll find crab paired with radish, apple, basil and yuzu; followed by salt aged yorkshire duck from the stove. Heading to the pastry section, Adam's selection of desserts include British cheeses, his signature chocolate and sea salt dessert and black fig paired with walnut, bee pollen and honey from the estate. 

Combining the interiors, the menus and the atmosphere and the restaurant, Adam aims to tell stories from his career as well as from the idyllic landscape. Dishes on the seasonally-changing menu are inspired by the finest produce; guests are treated to fresh seafood, professional butchery, foraged mushrooms, hand-picked herbs and native flower garnishes.

A masterclass all round

Impeccable sums up the experience at Woven.  From the ambience, the service, the décor, the food, the wine, cocktails and presentation to the cheese room which is a wonderful experience in itself, especially if you love cheese, as I do.  There are some refreshing touches including a ‘bread course’ with the most delightfully interesting choice of dips and butter.

Having visited 6 or 7 times as a couple and with friends, I am sure that this restaurant has to be heading for at least 2 stars, easily rivalling those restaurants with 2 and 3 michelin stars in the capital.  Woven oozes modern elegance matched by sensationally well executed dishes.  So well trained are the kitchen team, that the standard is maintained even in Adam’s absence, as we experienced on one occasion.
