For something light at the bar, try the homemade cheese scones with Marmite butter, haggis fritters or fresh oysters over ice with tabasco and sweet shallot vinegar. The starters include a rich French onion soup with True Grit cheddar cheese and sourdough croutons, and beef fillet tartare with tabasco, crispy capers, anchovies and confit egg yolk, along with a heritage carrot tartare with pickled carrots, salted pistachios, Gjetost cheese and spiced game chips.
For your main, we'd opt for the truffle and herb-buttered free-range chicken with toasted brioche sauce and a coal tuile, or coal roasted whole sea bream served on the bone with shrimp and gremolata butter. Steaks are chosen by head chef Stephen Hinkley who works closely with selected farmers and butchers, and include rump, ribeye, sirloin and fillet. Sharing cuts include a chateaubriand and tomahawk, and if you're feeling particularly indulgent, you can add on five Argentinian red prawns. Butters and sauces will enhance your steak, with options of Tuxford and Tebutt stilton mornay, beef jus and café de Paris.
Some of the signature steaks include USDA prime delmonico, which is a superior grade of grain fed beef, with plenty of juiciness and with a fine texture. You can also enjoy an Australian black angus striploin from the specials menu, which is exceptionally well marbled for a great taste.
