In Search of Perfection is the TV show that brought us Heston Blumenthal, and here – in Heathrow Terminal Two of all places – its most famous dishes are recreated. Expect all the greatest hits: unfathomably light fish & chips with vinegar and pickled-onion juice atomiser; crusty-seared rib-eye steak with béarnaise and salad; gutsy chilli con carne; and authentic, crisp-crusted pizzas, blistered in a wood-fired oven. Not everything is ‘as-seen-on-TV’; equally impressive are black pudding Scotch eggs with gooey centres and chunky piccalilli; grilled sourdough and dressed cherry tomatoes as DIY bruschetta; and flatbreads covered in mozzarella and garlic butter. Yet these pale in comparison to liquid-nitrogen ice creams – the millionaire’s sundae is a must. The dining space is a stunner: all sky-blue leather booths, parquet flooring and marble tables attended by warmly efficient staff. Under-12s eat free, so children are ubiquitous, but innovative cocktails (the miso Bloody Mary is a winner), high-spec spirits and well-chosen wines help adults drown them out. A glorious escape from the drudgery of airport dining.
