The Lobster Pot is made up of two family-run seafood restaurants, in Nottingham and Beeston, founded by us, the Pongsawang family, after we moved from Bangkok, Thailand, to England in 1991. The first Lobster Pot was opened in Nottingham by Wat, my father, and initially served English seafood dishes. Over time, we began to infuse the dishes with more Thai spices and flavours and the combinations were a hit.

I took over The Lobster Pot Nottingham from my father in 2014, and later opened a second restaurant in the heart of Beeston 2 years later. The space used to be a Thai restaurant run by my Uncle, so the menu draws on our family history and boasts even more Thai inspired dishes. My sister, Danni, now runs the Nottingham Pot, managing the restaurant as well as working some magic out the back as the Head Chef.
