Brighton is known for its brilliant restaurant scene, informed by its beach-side location along the south coast. The Copper Clam is a great example of this, offering locally-sourced, fresh seafood in its stylish restaurant just a stone's throw from the shore.
Locality is at the core of everything The Copper Clam does, not only working with local fisherman to use daily-caught lobster, but also farmers and growers across the county to provide a selection of Sussex steaks and even sparkling wines from Sussex and Kent.
There are several menus available, ranging from a la carte and buffet to canapes and set course. From the a la carte you can expect a selection of small plates such as pan roasted scallops with pork crackling, smoked paprika mayo and lobster oil, or buttermilk crispy squid with caramelised banana, crispy lotus root and wasabi dip, as well as a selection of oysters with an interesting range of toppings like lobster bisque foam and parmesan.
For mains, we like the sound of the whole wild mackerel with cashew nuts, beetroot, king oyster mushroom, goats curd emulsion and wild garlic, as well as the lobster spring rolls with lobster bisque, crispy leeks and lobster oil. Or, you could try one of the sharing platters which offer a selection of Sussex crab, lobster, mussels and tiger prawns.
For a set price, the buffet menu is a fun way to try a selection of what The Copper Clam has to offer, putting a spread with delights such as Teriyaki prawn skewers, roast pork roulade and tuna arancini. Or, try the canape menu for a different way to enjoy the restaurant's signature range of flavours. This option includes six canapes per person with small bites like pickled beetroot tacos with goats cheese mousse and walnut, as well as smoked salmon and lime muffins with wasabi caviar.
