Purezza is a vegan pizzeria in Brighton. It claims to be the first restaurant of its kind in the UK, and since its founding in 2015 has opened branches in Camden and Manchester. Sustainability is at the heart of operations, including policies such as zero landfill, no single-use plastics and converting used cooking oil into biodiesel. In addition, renewable is used where possible in every branch and any gas needed is always carbon neutral. The founding principle of owners Tim and Stefania is that great food has to be shared, resulting in restaurants that immediately create an inviting atmosphere and can cater to groups of almost all sizes.
The food menu is broad, extending beyond just pizza and likely to offer something to suit most tastes. There’s two starters: marinated kalamata and beldi olives and crunchy deep fried corn and roasted green pea mix fritters. The small plates range is the perfect companion to your chosen pizza, with options including a vegan caesar salad and a vegan mac and cheese.
Purezza’s dough is made daily from organic wholegrain flour and matured for 48 hours before use. Each pizza is hand stretched to order and is available with either a sourdough or gluten free base. Mozella takes the place of mozzarella and parmesan is substituted for hemp parm.
Classic pizza toppings are well represented, including margherita, ‘pepperoni’, four ‘cheese’, and marinara. In addition, there’s also BBQ bourbon, black truffle, and mimosa (white base, La Vie plant-based smoked ham, sweetcorn and basil). A selection of four desserts round out the food menu: brownie, tiramisu, New York cheesecake and gelato.
