Authenticity is often a hot topic on London’s restaurant scene, but this Chelsea Italian has gone to extra effort to showcase genuine regional cooking by importing real-life Italian ‘mammas’ to the kitchen seasonally. Every three months, Italian chefs from different provinces of the country will take the helm, creating a selection of tasting dishes for the menu. They will be given a helping hand by executive chef Marco Giugliano, who has worked in the kitchens of Quattro Passi and Il Baretto in Mayfair. Although the menus will change as often as the guest chefs, you can expect fresh pasta made daily on site, alongside a selection of meat and fish slow-cooked on a Robata grill.
