Newquay is known for its independent eateries and quirky food concepts, and Counterculture at STAX fits into this bracket perfectly. If you're not familiar with the ol' run-of-the-mill STAX, this day-time lunch spot serves up juicy sandos which fill freshly-baked slices of bread with filling combinations like fried chicken with anchovie mayo, shavings of parmesan, tomato, bacon and baby gem lettuce drizzled with ceaser dressing.
While this sounds ever so hearty for a mid-day snack, come evening and a totally different side of STAX comes out. This, we (well, they) call Counterculture. Open from Wednesday to Saturday nights, from 6pm until 10pm, this groovey, little space is all about enjoying great food, music and drinks with a friendly, collaborative atmosphere and an open mind. We love how the owners have put the bar's concept themselves, describing Counterculture as "STAX’s wild and rebellious older sister, probably the kind that reads Marxist literature, drinks bootleg gin, and smashes through glass ceilings."
If that sounds like your kind of place, then just roll up. There's a strict no reservation policy for tables up to six, as the founders want this to be the kind of spot that's always (hopefully) got a spare seat free. But, if you're hoping to book for a birthday or special occasion for a larger group and, understandably, don't want to encourage friends to meet you without the promise of a table, they can make an exception.
As for the food, think small plates and pintxos inspired by San Sebastián which change regularly. While you might not be sure what will be there on the day, previous nibbles have looked like braised pork belly with butter beans and salsa verde, alongside goat cheese and red pepper with romesco and toasted almonds croquettes - which all sounds very delicious, doesn't it?
