This grand old boutique hotel overlooking the über-exclusive Muirfield golf course was home to fighter pilots during the WWII and it’s easy to imagine the officers quaffing G&Ts in the cosy splendour of this nicely dog-eared, Lutyens-designed house. These days, the restaurant is part of Albert Roux’s mini empire, so expect French-inspired fine dining crammed with pâtés and soufflés – although it’s not outrageously expensive and you can keep costs down by opting for the fixed-price lunch and dinner menus. Expect classically inspired dishes ranging from seared scallops with a caramelised Belgian endive tart, candied orange peel and red wine sauce to roast saddle of rabbit with langoustines, creamy polenta, girolles and purple sprouting broccoli, followed by ‘a symphony of Granny Smith apple served hot or cold’. A lighter all-day menu is available in the bar and lounge.
