AJI SUSHI was the first sushi bar ever to grace Hove’s restaurant scene when it opened back in 2018. Named after the restaurant’s resident dog, Aji, its aim is to deliver high-quality Japanese food with an unrivalled dining experience. Head chef and co-founder Byung began his career working as a designer before his love of food saw him make the switch over to the chef life. Using seasonal British ingredients alongside key Japanese flavours, his style blends traditional and modern techniques to create something new, complex and fresh.
The restaurant itself is small and minimalist, with a central wooden bar where guests can watch the chefs at work, as well as counter seating facing out over the streets of Hove for those prefer to watch the world go by. Elsewhere, bottles of sake are displayed on wooden shelves, while a trendy light fixture hangs above the counter bar.
The menu comprises a selection of sharing plates with a focus on sushi, but you can also find rice, noodles and a small selection of starter plates, too. Sashimi, tataki and maki rolls all make the list, but its Kyung’s exciting flavour combinations which are not to be missed. Signature ‘Aji rolls’ include one called One the Drive featuring tempura prawn, sweet and spicy sauce, tobiko, avocado, cucumber and crab sticks, while Cheesy Dragon combines teriyaki grilled eel, cream cheese, avocado and cucumber. Guests can also opt for more substantial dishes, like eel donburi or a hearty udon bowl featuring handmade udon and a warming broth.
The drinks list is geared towards sake but you’ll also find a selection of wines, cocktails, beer and cider on the menu if that’s more your thing. Aji Sushi is also available for takeaway where you can order all its sushi dishes straight to your door.
