Ingredients

120ml good olive oil
170g caster sugar
3 large eggs
60g cocoa powder
150g self raising flour
1tsp baking powder
Splash of vanilla essence

Method

Preheat the oven to 180°C

Whisk the three eggs in a large mixing bowl

Mix all the remaining ingredients into the whisked egg until combined fully

Pour into a greased and lined tin

Bake for 45 minutes
