We like the sound of the Hodgson's Cod, which is a cured, steamed and duck fat poached loin of cod and white crab meat wrapped in pumpkin, enoki mushroom ragout and smoked butter emulsion, or the Cumbrian Longhorn Beef Wellington, spiced with Tandoori spice and roasted over charcoal, served with classic mushroom duxelles and tandoori jus. And, how about finishing it off with a hazelnut souffle, with banana ice cream and fudge sauce? Something we reckon most guests would enjoy.
