Having opened its doors on 7th March 2014, The Elderflower Restaurant in Lymington is the result of a dream for the dynamic husband and wife team, Andrew and Marjolaine Du Bourg. And with over two decades of combined experience in leading restaurants across England and France, they bring a wealth of culinary expertise to their unique establishment.
The dishes reflect Chef Patron Andrew Du Bourg's culinary skill, embodied in his signature tasting menu — a journey that delights with every thoughtfully crafted course. Start the tasting menu with crispy duck wing with grouse leg and smoked coronation chicken, and then move onto a confit chalk stream trout with hibiscus sauce, celeriac remoulade, wasabi and buttermilk sorbet. Next up is the smoked eel and mushroom stew with wild mushrooms, Roscoff onion and tarragon. Then, you'll be served the catch of the day, which is often pan fried halibut with crispy capers and artichoke crisps, and a chervil root puree. Before dessert begins, it's venison with a white onion parcel, smoked oysters and lentils, and then the pear tarte with hazelnut praline, yoghurt and pecan ice cream. Last but not least is the chocolate and whiskey mousse with coffee ice cream and rich cigar smoked chocolate.
