The gorgeous South Downs are visible from the comfort of the 36-cover dining room, but if you want to get up close and personal with the landscape that has inspired your meal, there’s a restaurant deck area, pergola, and fire pits open all year round. And, if you’re celebrating with family, or planning a working lunch with colleagues you’ll have a secluded eight-seater private dining room available upon request.
Under the guidance of executive head chef Chris Hilton, the TERRA restaurant menus change daily reflecting the availability of seasonal produce. It’s a clean, modern menu. Starters have included beetroot, fennel and apple soup; citrus cured seabass with pickled cucumber; and a twice-baked Sussex cheese souffle.
As for the mains, expect something along the lines of Sussex pork belly with spring greens and warm apple jam, baked cod with a fresh crab and panko crust; and roasted cauliflower satay with pearl barley risotto. You’ll also find a fine selection of lighter plates and salads. Just be sure to save some space for dessert.
A mocha delice formed of chocolate cremeux with caramelised cob nuts and coffee meringue all set atop a crispy praline base is too good an opportunity to pass up. That’s just the start.
