This Japanese restaurant at the Regent Street end of Soho resides in the space formerly occupied by Hawksmoor spin-off Foxlow. Pacific is the brainchild of acclaimed Australian chef Shaun Presland, who has looked beyond his roots to hone in instead on Japanese cooking.
Presland is a big name in his native Australia, and he spent years mastering Japanese cooking under the tutelage of some of the world’s best Japanese chefs. He was previously executive chef at the Sake restaurant group in Australia, which has received praise from both critics and the general public alike. Pacific is a more casual offering than Presland’s previous restaurants and serves up an all-day menu of fresh and colourful dishes, which take inspiration from both Japan and his home country.
The chef has planned to open a restaurant in London for some time, and he’s previously flown over here to host restaurant pop ups. In 2015, the chef took over the kitchen at Marylebone’s Carousel (which has a revolving-door kitchen that hosts different chefs every few weeks), while two years later, he returned to the capital to host a series of supper clubs at The Tate.
