The first Olivo to be opened back in November 1997, Olivo - Guildford is set in a building believed to be a late Elizabethan timber-framed house, dating back to the early 1660s. The current Restaurant Manager is Mr. Paolo Ditale, whose passion for food, service and detail has inspired an amazing menu and a superb style of service. Olivo's cuisine is based on three basic principles: Traditional Italian methods, modern interpretation and the use of quality raw ingredients. It is traditional Italian because the staff do not compromise on the basic principles, and yet it is modern because these classic recipes are revisited, interpreted and adapted by the creativity of the kitchen team. They have also carefully selected the wines in the cellar to provide you with a wide range from all over Italy.
