Now or Never is an innovative new dining concept opening in Lancaster's city centre from the team behind Journey Social, an already well-established local brunch spot. Now or Never is helmed by husband and wife team Jeff and Nichola Marshall, who run the kitchen and manage the restaurant respectively. Jeff has won multiple awards and has worked in both on-and-offshore private dining, and is incredibly passionate about Lancashire's natural bounty. Nichola not only leads the front of house team, but is a sommelier and the in-house foraging expert, having studied British and European wild flower and herbaceous edibles.
The concept for Now or Never cleverly ties into the restaurant's name. The menu lifts up local Lancastrian and Cumbrian produce in a constantly changing selection of dishes which use only the freshest, seasonal ingredients in the form of a multi-course tasting menu, with the aim of creating something this city has never seen before. The team say it's unlikely you'll see the same menu twice, so if there's a dish you particularly like the look of, it's now or never!
While the menu will always be somewhat of a surprise, there is a sample online to give you an idea of what to expect. Currently, diners can enjoy 11 courses with highlights such as mushroom, cow fat and chives, alongside cod, cockle and salsify, as well as lamb and allium. There's also rhubarb with white chocolate and pistachio, and citrus and spruce, for sweets. As well as unique flavour combinations, expect above-and-beyond presentation with intricate creations and edible decorations.
Set in a Grade-II listed building, the interiors feature a sophisticated colour palette and natural materials for an elevated feel. Atmospheric lighting and candles an intimate vibe, so it's the perfect place for a date or catch up with close friends.
