A celebration of the cuisine and wines of Northern Spain, Norte (formerly named Bilbao Berria and still a part of that restaurant group) is spread over two floors, with an open kitchen on each level: one area is devoted to casual pintxos, tapas and Spanish wines by the glass; the other is a more formal space, offering top-end Basque specialities and generic dishes. Imported produce is the cornerstone of the set-up, with cured meats, cheeses and preserved vegetables playing a key role on the menu – expect salted cod tortillas, Josper-roasted suckling lamb leg with patatas panadeiras, courgette salad given a smoky twist with pressed Idiazabal cheese, or perhaps fried rabbit with garlic and honey. Wash it all down with a classic cocktail and soak up the atmosphere in the low-lit, stylish dining room.
