This month, Ben talks to Duck & Waffle executive chef Daniel Doherty about his passions and experiences, and tastes Catena wine from Argentina.

The chef: Daniel Doherty
Native Brit Daniel Doherty began his career at Michelin-starred 1 Lombard Street before honing his skills at Roux Fine Dining. In 2008, he became head chef at The Ambassador in Exmouth Market, and shortly after accepted the position of head chef at The Empress in Victoria Park. 2010 saw Doherty open The Old Brewery in Greenwich, which received accolades including Best British Restaurant (2011) thanks to its artisanal menu. The following year, Doherty become executive chef at Duck & Waffle, London’s first 24/7 gourmet dining restaurant. His awards include Rising Star Chef at the 2013 Tatler Restaurant Awards and being named one of London’s 1000 Most Influential People of 2014 by the Evening Standard. He is the youngest member of The Royal Academy of Culinary Arts to date.
The wine: Catena Malbec Appellation Vista Flores 2012
The grape variety used in this wine is Malbec, a red grape with a very thick skin. These particular grapes are grown at the Appellation Vista Flores vineyard in the Mendoza region of Argentina, where plenty of sunshine and a high altitude helps them to thrive. Malbec makes big, rich, dark wines with flavours of plum, dark chocolate, blackberries and tones of spice and pepper.
