Having closed their last two restaurants in York, Joshua and Victoria's next venture, Mýse — Anglo-Saxon for 'eating at the table' —aims to be a reflection of their restaurant dream. Aiming for something more ambitious, using their Yorkshire surroundings and produce as the palette, they paint a picture of traditional North Yorkshire cooking with a spin—taking inspiration from the homely dishes of Joshua's childhood when his grandmother cooked for him and turning it into top-class dishes fit for fine-dining.
With Sommelier and Partner Victoria taking the front of house and Joshua heading the kitchen, Mýse is scheduled to open in June with rooms to open soon after, offering guests the opportunity to both dine and stay the night. Situated in the main street of the quaint village of Hovingham in a 19th-century inn, formerly the Malt Shovel, you can anticipate great things to come of this fine establishment within the North York Moors.
Expect French and English wines from a wine list curated by wine team Keeling Andrew & Co alongside Yorkshire beers, local gins, and cocktails to be enjoyed in the cocktail snug.
Teasing the tastebuds, the sample menu provides a sneak peek of what's to come. Light herbal mussel broth, raw razor clam, Yorkshire rhubarb umeboshi and elderflower, duck liver and walnut pie. In-house baked sourdough with butter and chicken drippings; sweetcorn husk custard with kernel velouté and hedgehog mushrooms. And a selection of sweet dishes of mouth-watering variety.
