For dishes that are almost too pretty to eat, and a setting to match, Aizle is Edinburgh's answer to anyone who values the finer things in life. Spearheaded by chef and owner Stuart Ralston, Aizle has built itself around the promise to display the best produce that Scotland has to offer.
Set in the idyllic garden room of the Kimpton Charlotte Square Hotel, in the heart of Edinburgh, Aizle is the quintessential fine dining experience.
The first of Ralston's four Edinburgh restaurants, Aizle has been leading the conversation around seasonal cooking since 2014. Not only do they work with local suppliers and producers, but they are constantly altering their menu to reflect what is at its best. Some menu items may only last for a few days before the team decides to switch them out for a more updated, seasonal plate.
Beyond this, Aizle also take care to make everything they serve in-house, from their fermented sourdough to their hand-churned butter. Their home-brewed kombucha is not to be missed, especially when used in one of their cocktails.
The restaurant offers either a seven, or five-course tasting menu, with an additional cost for wine pairing. The commitment to seasonality means you cannot predict what will appear on your menu, but you can be sure that it will be a thoroughly unique experience, introducing you to the flavours of the best produce of the season.
