This beautifully bright drink goes down well on weekend afternoons or at birthday brunches and has been known to win over many Campari-sceptics (the natural sweetness of the fruit juice helps). You might have to hunt a bit for the blood orange juice; Tropicana does one called Sanguinello. Failing that, try a ruby breakfast blend as Campari works really well with pink grapefruit. For the fizz, almost nothing is too cheap. You just need something dry and white with vigorous bubbles. Serves 10

 

Ingredients

1 bottle cheap sparkling dry white wine
200ml Campari
500ml blood orange juice

Glass: Champagne flutes

Chill all ingredients

Mix in a jug

Add ice if you need to, but it’s less sploshy to get the ingredients cold in the first place.
