This cocktail is a spectacular green colour and for its creator Oskar Kinberg (Hide Below) it is the last hurrah of summer. The balance of flavours between the green tea and Tequila ensures the drink is both earthy and fresh.
Glass: wine glass
Place the cucumber in the shaker and muddle with a shiso leaf
Add Tequila, lime, gomme, celery juice and tea
Shake and double strain into an ice-filled wine glass
Garnish with cucumber bunny ears and a shiso leaf
Serve with a straw
