The Negroni (equal parts gin, red vermouth, Campari, stirred over ice, with a slice of orange peel) is without peer, but just occasionally I order this instead, says drinks expert Victoria Moore. The name translates literally as a ‘Negroni gone wrong’, but there is a lot that’s right about a drink in which Prosecco substitutes gin so it isn’t quite so fearsomely strong, and the gentle fizz gives a spring-like lift to its step. The better the red vermouth, the better the drink will be; go for Cinzano or Martini Rosso, or stretch the budget and upgrade to Punt e Mes or Antica Formula. (Do remember that red vermouth goes stale if it’s been open for ages, so check an old bottle first.) Serves 1
