One from Luis Simoes’ drinks list at Chiltern Firehouse (in 2014), this stunning pink drink marries the strawberry characters of the vermouth with the mint and grapefruit to beautiful effect.

Ingredients

70ml Cocchi Americano Rosa
6 mint leaves
1 grapefruit twist

Method

Glass: Rocks

Chill this vermouth first in the fridge

Rub the mint leaves on the rim of the tumbler

Take a mixing glass, fill with ice, place the mint leaves in and stir to cover the ice with the mint oils

Spray the oil from the grapefruit twist on the ice

Pour the Cocchi into the glass and stir briefly

7

Garnish with a sprig of mint
