Long Island Peach Tea

Long Island Peach Tea

This is a fantastic take on a classic punch recipe, although it needs to be made the day before you want to drink it and left in the fridge to cool overnight. It’s better to buy over-ripe peaches that are soft and full of flavour rather than the hard specimens normally found in supermarkets.

Ingredients

4 Earl Grey tea bags
1 litre boiling water
300ml gin
170g caster sugar
2 ripe peaches, peeled, stoned and sliced
Juice of 2 lemons
1 litre chilled water
Lemon slices for garnish

Method

Put the tea bags in a heat-proof dish and pour in the boiling water; leave to steep for two minutes

Remove the tea bags and add the gin, sugar, peaches and lemon juice

Once cooled, cover and place in the fridge until the next day

Remove the peach slices and add 1 litre of chilled water

Garnish with lemon slices and serve in tall glasses with lots of ice
