Bols Genever is a triple-grain spirit that's blended with juniper distillate and made in Amsterdam (hence the name of the drink). It has a malty, almost toasty quality that we think works really well with the marmalade. Drink this as an aperitif.
Glass: crystal tumbler
Measure all the ingredients except the cider into a shaker
Fill with ice, shake and strain into an ice-filled tumbler
Top up with the cider (about 35ml)
Stir for about 15 seconds
Garnish with a liquorice stick
* To make the bergamot marmalade:
10 bergamots, 250g sugar. Zest then segment the bergamots. Place the segments in a pan with the sugar and cook until thickened. Add the zest.
