The alcohol content of Aperol is a very modest 11%, but it is strong on flavour, so this drink doesn’t feel dilute. It used to be impossible to find (unless you were making a trip to the redoubtable Gerry’s of Old Compton Street in Soho) but now it's readily available in supermarkets and online.
You do need Prosecco for this; the slightly sweet pear taste is just right. Serves 6-8
