Named after the 150-year-old building it’s housed in, Mark Sargeant’s second offering in Folkestone is a fish-and-chip shop with a modern ethos: as with nearby venture Rocksalt, fish are locally
sourced and sustainable. The menu is reliant on the daily catch, and while traditionally battered fish will always grace the menu, other dishes include salt-and-pepper squid, baked lemon sole,
battered scallops, and even mussel popcorn. The airy dining room makes the most of its sea view with a two-storey, five-metre window overlooking the harbour, while stainless-steel sculptures of
sealife provide yet more visual stimulation.
